Sheet Pan Chicken and Sweet Potato Meal Prep

This Meal Prep Is Life-Changing

Lindsay Ostrom headshot.

I see you, hungry person with an empty fridge on a busy Monday (ugh, aren’t Mondays so rough? come ON, life), and I acknowledge the weariness that you’re carrying, BUT YOU AND I? WE CAN DO THIS.

You can, you can, you can. This requires 45 minutes of mostly-hands off time, and you can feel really good about it because it looks pretty and tastes delicious, especially with a big ol’ side of avocado and hummus. And then you can enjoy it 5x over in all its different forms (cold salad! warm veggie / rice bowl! soup! pasta! taco! cause I don’t know, maybe you like broccoli in your tacos? whatever) and appreciate all the yummy nutrition and back-to-dinner-table-basics it brings into your life.

By making regular meals, feeding myself good food on the most basic level and not stressing about all the other stuffs, this is what I’m trying to do: I’m trying to leave a little margin in my life for some above and beyond food inspiration. Going backwards to go forwards. It’s me and maybe you starting a wave of fresh new energy by just going super simple, totally stripped down, completely basic on ourselves.

Hope you love this!

Sheet Pan Meal Prep

This “recipe” is less of specific recipe and more of a concept that we’ve been loving lately. Loving as in EATING IN OUR REAL LIFE. I didn’t make this for the blog – I made it for real life first. And now I love it so much that I want to share it on the blog. And that order feels refreshing.

Here’s the concept: Fill sheet pans up with good ingredients – vegetables, protein, etc. – toss with olive oil and good salt and spices, roast for a while, then pack into containers for easy eating and lunch-taking and meal-building all week.

Here are the specific ingredients we love:

  • Protein: Chicken aggressively covered in yummy spices, but you could also use tofu for a veg version.
  • Carbs: Sweet potatoes! So filling and so satisfying – regular potatoes would work too.
  • Veggies: I love love love broccolini, but any other green vegetable would work (asparagus, regular broccoli, cauliflower, or brussels sprouts).

Sauce Options For These Bowls

These bowls are great on their own for lunch and meal prep, but I really really love a good sauce. Here are some delicious options to highlight:

  • Magic Green Sauce: Herby, nutty, avocado goodness!
  • Green Tahini: Another green herby gem, and keeps so well throughout the whole week.
  • Chipotle Tahini: The smokiness of this works so well with the chicken and sweet potatoes. Love it so much!
  • Hummus: Store-bought or homemade! Perfect little swoop on the bottom adds some extra protein and fiber.

Best Containers For Meal Prep

I love these round glass storage containers for meal prep. (affiliate link)

They hold up to 4 cups, have a super secure lid, and stack beautifully in the fridge!

Spicy Chicken and Sweet Potatoes: FAQs

What’s the seasoning mix you use?

I am currently having a moment with this Cajun seasoning mix – it’s a super versatile mix of garlic, salt, onion, paprika, oregano, white pepper, and red pepper, and just the right amount of spicy for us. It would be really easy to make yourself, too, like so. But really, any spice mix you like could work here. The only guidelines I’d give would be to adjust based on salt and spiciness. So if your mix doesn’t have salt in it, add plenty of salt yourself, and if it’s not spicy enough, add a little cayenne.

I don’t love broccoli. Any other veggies I can use?

Yes! Any vegetables will work here! This is the combo we’re currently loving, but asparagus has treated us well as have cauliflower, brussels sprouts, and carrots.

Can I make this vegetarian-friendly?

You sure can! Pan-fried tofu would be soooo yummy here.

How long does this keep in the fridge?

This lasts up to 4 days in fridge storage!

Hello. This is very good; however, I am not sure how you came up with the nutrition information. With the ingredients and servings listed, this is around 580 calories and 74 carbs.

  3. Pinch of Yum Logo

It’s actually not a recipe when you just say”spicy mix” and link to a product.

  7. Pinch of Yum Logo

What is the serving size? It looks like those bowls hold 4 cups in each? That is what amazon says. I am just starting this calorie counting, so it is VERY CONFUSING!
Any help would be much appreciated.

Hi, Michelle! It’s a little hard for us to say the exact serving size here since we don’t typically measure that out. We know this recipe as-is will make about 8 servings though. Hope this helps! Enjoy!

  8. Pinch of Yum Logo

I’m just starting out with working out macros meals. These look delicious and healthy.

Delicious, nutritious blend and an excellent base to make modifications and play around with different flavors or just use up what you have in the fridge!

I didn’t have broccoli so I substituted diced carrot. For the “spicy seasoning mix” I used a homemade cajun seasoning from Gimme Some Oven blog and I sprinkled some on both the carrots and sweet potato. Whew! A little too much spice. I was sweating. I warmed the bowl up a bit with a nice drizzle of tahini, a good squeeze of half a lemon, and some diced up Honeycrisp Apple. VOILA! Fabulous! 100% will make again. The apple changed the dish.

I also added a base of white quinoa toasted in a small splash of olive oil with the addition of fresh oregano/thyme, garlic powder, onion powder, smoked paprika, and lemon juice. I think next time I’ll add the honeycrisp apples in here as well.

Thanks Lindsay for the great recipe! Looking forward to making this as a meal prep.

Not a huge fan of spicy, but I really wanted to find a good sweet potato and chicken recipe. I’ve never been a huge fan of sweet potato either but i’m trying to eat a little more healthy. I switched up the spicy seasoning for garlic, Italian seasoning, and rosemary. Everything else I did exactly to the recipe. It was so delicious, that I wrote it down for future dinners. My husband was so impressed. Thank you for posting this delicious recipe. It will be a favorite for years to come.

Stumbled across this resume a few years after the post but it’s solid and easy :). Personally I found 15 minutes a little too short for the chicken but otherwise it was excellent.
